There is only one train from HK to Shantou, departing from West Kowloon Railway Station at 13:56 and arriving at Shantou at 16:57. Sorry I don't know any car rental company, but you can simple use Didi, Caocao or other apps to hire a private car with driver.

Chaozhou to Shenzhen to Hong Kong
Hello, this is Kai from Singapore. I am planning a trip in September in China and I want to use a train service to HK finally. I know there are direct trains to HK but I am wondering if it is worth a short visit in Shenzhen? Is a half day visiting in Shenzhen worth the trouble of transferring?

If you have free time, I think you can consider to have a few hours at Folk Culture Villages which is near Huaqiaocheng station of metro line 1. As it is not far from a metro station, the transfer is not hard. But you would need to plan an early morning trip to Shenzhen and a later ride to HK.

I wish to travel to Shantou from Kuala LUmpur.
Should I fly directly to Shantou or fly to Shenzen then take a train to Shantou City?

If there is a direct flight to Shantou it should be better. To transfer in Shenzhen, you need a lot extra time.
