Usually there is always discount tickets. Winter is not a peak time for travel. Maybe your travel date is very far from now? Sometimes, the discount only appreas around 30 days. You can recheck it.

For this long distance trip, it is safer to book in advance. See from the tickets, there is a chance that the seats can be fully booked. You can buy the tickets for return trip together, no matter online or at station. There are always many hotels can be found near a railway station. You can check on Agoda.

The station is always busy, regardless of the days. It is just even busier during a holiday time -. But I suppose if you reach the station very early in the morning time, it should be not as busy as normal working time. The station advise me to reach ticket counter 1.5 hours in advance as there could be a long queue, During early morning time, maybe shorter time is required, but still no less than 1 hour in case there is any accident there.

If you will depart from Shenzhen, you do not need to go to Guangzhou. There is a direct one from Shenzhen at 8:54am. Though it takes 8 hours on the way, the total time would be the same if you transfer in Guangzhou. The ticket price is also cheaper.
