The colour is not due to seat class but the way for ticket collection/purchase. If you buy or collect tickets at station ticket counter, it would be blue tickets. For delivered ticket (they will deliver paper ticket to your hotel), they are pink ticket.

I intent to book this train to Taian, however, it is no longer listed on your website. When I checked on your website some weeks ago, I see this it. Is this train cancelled?

Thank you for your inquiry.
Due to the railway schedule adjustment, this G323 is currently in pending status since April 30. It is not clear yet when will this train back to service again. You may check it on our website often in the following weeks. If it back to service again, we will add it on our website too. Sorry for the inconvenience.

Taishan and Taian are two different stations? Which one is closer to Mt Taishan?

Yes, they are two different stations. Taishan station is closer in distance but it only supports normal slow ride. So if you take high speed ride, you will reach Taian station. Though it is a little far in distance, it is not hard to reach Mt Taishan.
If you plan to climb the mountain, you can take bus No. 61 or 37 to Hongmen and then start your climbing. If you want to use the bus and cableway, you can go to Tianwaicun. You can still use bus No. 37 or No. 62
