You can book with TravelChinaGuide hassle-free. As I know, there is no two-week train pass. There are monthly passes but holding it, you can only travel back and forth between two cities, not suitable for visitors making different trips.

144 hr visa free stop over for tourists
Does the 144 hr visa free entry apply for American or Canadian tourists going from HK to Shanghai by train and then leave Shanghai by plane back to HK or a different Asian country

No, it doesn't. First, a return trip HK-Shanghai-HK is not applicable. Second, a train from HK to Shanghai is not eligible, either. An eligible route should be HK - Shanghai - another Asian country and they are both by air.

Generally, there is no bed on the high speed train between HK and Shanghai. However, it is also available to lying down on the business class seat, though it costs much higher.

I read that passengers are advised to be there 2 hours before train time. English service can be easily found at station in HK. You do not need to worry about it.
