What can we do at Hong Kong Airport waiting to get flight to Guangzhou? About 8 hours.

According to your stopover time, it is too short to tour around HK downtown area. Thus you are advised to kill time at HKIA.
There are many stores and restaurants in Hong Kong Airport. You could buy some local souveniors, Disney toys or luxioury goods there and have some nice dinner.

It is suggested you visit the heart area of the city, Tiananmen Square (several attractions are within walking distance including the Forbidden CIty, so you can generally have a look from the outside due to the limited time) and the surrounding bazzar like Qianmen and Wangfujing Street.
